  • 1 cup Red bell pepper Diced
  • 0.5 cup Red onion Finely chopped
  • 0.5 cup Cilantro Chopped
  • 0.25 cup Jalapeño Minced, optional

Dressing

  • 0.25 cup Lime juice Freshly squeezed
  • 2 tablespoons Olive oil Extra virgin
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Cumin
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • If using frozen corn, cook according to package directions. If using fresh corn, grill, roast, or boil until tender. Let cool slightly.
  • In a large bowl, combine the corn, red bell pepper, red onion, cilantro, and jalapeño (if using).
  • In a small bowl, whisk together the lime juice, olive oil, chili powder, cumin, salt, and pepper.
