  • 1 lb Polish Sausage Kielbasa, cut into 1-inch pieces
  • 1 lb Sauerkraut Drained
  • 1.5 lb Potatoes Peeled and quartered
  • 1 medium Onion Chopped
  • 2 tablespoons Olive Oil
  • 1 teaspoon Caraway Seeds Optional
  • 0.5 teaspoon Salt To taste
  • 0.25 teaspoon Black Pepper To taste

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the Polish sausage and cook until lightly browned, about 5 minutes.
  • Stir in the sauerkraut, potatoes, caraway seeds (if using), salt, and pepper.
  • Add enough water or broth to cover the ingredients. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the potatoes are tender.
  • Serve hot and enjoy!

Notes

This recipe is easily adaptable to your taste. Feel free to add other vegetables like carrots or bell peppers. For a spicier dish, add a pinch of red pepper flakes.
