Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the Polish sausage and cook until lightly browned, about 5 minutes.
Stir in the sauerkraut, potatoes, caraway seeds (if using), salt, and pepper.
Add enough water or broth to cover the ingredients. Bring to a boil, then reduce heat to low, cover, and simmer for 30 minutes, or until the potatoes are tender.

This recipe is easily adaptable to your taste. Feel free to add other vegetables like carrots or bell peppers. For a spicier dish, add a pinch of red pepper flakes.
