Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
Sear chicken breasts for 3-4 minutes per side, until golden brown.
Remove chicken from skillet and set aside. Add garlic to the skillet and cook for 1 minute, until fragrant.
Add spinach to the skillet and cook until wilted, about 2-3 minutes.
Pour in chicken broth and bring to a simmer. Stir in Parmesan cheese.
Place the chicken breasts back into the skillet on top of the spinach mixture. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through.
