  • 1.5 lbs Boneless, skinless chicken breasts
  • 10 oz Fresh spinach Washed and chopped
  • 1 cup Chicken broth Low sodium
  • 0.25 cup Grated Parmesan cheese
  • 2 cloves Garlic Minced
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • Heat olive oil in a large oven-safe skillet over medium-high heat. Season chicken breasts with salt and pepper.
  • Sear chicken breasts for 3-4 minutes per side, until golden brown.
  • Remove chicken from skillet and set aside. Add garlic to the skillet and cook for 1 minute, until fragrant.
  • Add spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Pour in chicken broth and bring to a simmer. Stir in Parmesan cheese.
  • Place the chicken breasts back into the skillet on top of the spinach mixture. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until chicken is cooked through.
