  • 1.5 lb Boneless, skinless chicken thighs Cut into 1-inch cubes
  • 1 cup Plain yogurt Full-fat or low-fat
  • 1 large Onion Finely chopped
  • 2 cloves Garlic Minced
  • 1 inch Ginger Grated
  • 2 tbsp Vegetable oil
  • 1 tsp Garam masala
  • 0.5 tsp Turmeric powder
  • 0.5 tsp Chili powder
  • 1 tsp Coriander powder
  • 0.25 tsp Cumin powder
  • 0.25 cup Heavy cream
  • 0.25 cup Almond flour Optional, for thickening
  • 0.25 cup Chopped cilantro For garnish
  • 1 tsp Salt To taste

Preparation Steps

  • In a bowl, marinate the chicken with yogurt, ginger, garlic, turmeric powder, chili powder, coriander powder, cumin powder, and salt. Let it sit for at least 30 minutes.
  • Heat vegetable oil in a pan over medium heat. Add chopped onions and sauté until golden brown.
  • Add the marinated chicken to the pan and cook until it's browned on all sides.
  • Reduce heat and add garam masala and almond flour (if using). Stir well and cook for another 5 minutes.
  • Pour in heavy cream and simmer for 10-15 minutes, or until the gravy thickens to your desired consistency.
  • Garnish with chopped cilantro and serve hot with rice or naan bread.

Notes

Adjust the amount of chili powder to your spice preference. You can also add a touch of sugar to balance the flavors.
