  • 1 lb Pasta (penne, elbow, or rotini) Any short pasta shape will work well
  • 4 tbsp Butter Unsalted
  • 4 tbsp All-Purpose Flour
  • 3 cups Milk Whole milk recommended for creaminess
  • 1.5 cups Shredded Cheddar Cheese Sharp or mild, your preference
  • 0.5 cup Shredded Mozzarella Cheese
  • 0.25 tsp Salt To taste
  • 0.25 tsp Black Pepper Freshly ground, to taste

Preparation Steps

  • Cook pasta according to package directions. Drain and set aside.
  • In a large saucepan, melt butter over medium heat. Whisk in flour until smooth.
  • Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  • Reduce heat to low and simmer for 5 minutes, or until sauce has thickened slightly.
  • Remove from heat and stir in cheddar cheese and mozzarella cheese until melted and smooth.
  • Season with salt and pepper to taste.
  • Add cooked pasta to the cheese sauce and stir to combine. Serve immediately.

Notes

For a richer flavor, try adding a pinch of nutmeg to the cheese sauce. You can also top the pasta with breadcrumbs and bake it for a few minutes for a crispy topping.
