  • 2 lbs Boneless, skinless chicken breasts Pounded thin
  • 4 oz Cream cheese Softened
  • 0.25 cup Chopped spinach Frozen, thawed and squeezed dry
  • 0.25 cup Sun-dried tomatoes Oil-packed, drained and chopped
  • 2 cloves Garlic Minced
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

For Basting

  • 2 tbsp Olive oil
  • 1 tbsp Lemon juice

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a bowl, combine cream cheese, spinach, sun-dried tomatoes, garlic, oregano, salt, and pepper.
  • Spread the cream cheese mixture evenly over the flattened chicken breasts.
  • Roll up each chicken breast tightly and secure with toothpicks or kitchen twine.
  • In a small bowl, whisk together olive oil and lemon juice.
  • Brush the chicken roulades with the olive oil mixture.
  • Place the roulades in a baking dish and bake for 40-45 minutes, or until the chicken is cooked through.
  • Let rest for 10 minutes before slicing and serving.

Serve with roasted vegetables or a side salad for a complete meal.
