Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
In a bowl, combine cream cheese, spinach, sun-dried tomatoes, garlic, oregano, salt, and pepper.
Spread the cream cheese mixture evenly over the flattened chicken breasts.
Roll up each chicken breast tightly and secure with toothpicks or kitchen twine.
In a small bowl, whisk together olive oil and lemon juice.
Brush the chicken roulades with the olive oil mixture.
Place the roulades in a baking dish and bake for 40-45 minutes, or until the chicken is cooked through.
Let rest for 10 minutes before slicing and serving.
