Preheat oven to 450°F (232°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together gluten-free flour, baking powder, and salt.
Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
Add milk and stir until just combined. Do not overmix.
Turn dough out onto a lightly floured surface. Gently pat dough into a 1-inch thick rectangle. Cut out biscuits using a 2.5-inch biscuit cutter.
Place biscuits onto the prepared baking sheet. Bake for 15-20 minutes, or until golden brown.
