In a bowl, combine ground pork, soy sauce, Shaoxing wine, sesame oil, white pepper, minced garlic, and grated ginger. Mix well until the mixture is well combined and slightly sticky.
Place a small amount of the pork mixture in the center of each wonton wrapper. Fold the wrapper in half diagonally to form a triangle, pressing the edges to seal. Bring the two bottom corners of the triangle together and overlap, using a dab of water to seal.
Bring a large pot of water to a boil. Gently drop the wontons into the boiling water, being careful not to overcrowd the pot. Cook for about 3-4 minutes, or until the wontons float to the surface and are cooked through.
While the wontons are cooking, prepare the sauce by combining chili oil, black vinegar, and a pinch of sugar (optional) in a small bowl. Adjust the amount of chili oil to your preference.
Remove the cooked wontons from the pot with a slotted spoon and divide them among bowls. Drizzle generously with the prepared spicy sauce. Serve immediately and enjoy!
