  • 3 lbs Yukon Gold Potatoes Peeled and cubed
  • 2 cups Cooked Ham Diced
  • 1 can Cream of Potato Soup
  • 0.5 cup Milk
  • 1 cup Shredded Cheddar Cheese Divided
  • 2 tablespoons Butter
  • 1 teaspoon Dried Parsley
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Preparation Steps

  • In a large bowl, combine potatoes, ham, cream of potato soup, milk, 0.75 cup of cheddar cheese, melted butter, parsley, salt, and pepper. Stir until well combined.
  • Pour the mixture into a greased 6-quart crockpot.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until potatoes are tender.
  • During the last 30 minutes of cooking, sprinkle the remaining 0.25 cup of cheddar cheese over the top.
  • Serve hot and enjoy!

Notes

Feel free to add other vegetables like onions or bell peppers to the casserole.
