Preparation Steps
In a large pot, bring chicken broth to a boil.
Add the cooked and shredded chicken to the broth.
In a small bowl, whisk together rice vinegar and soy sauce. Add to the pot.
In another small bowl, mix cornstarch with water to create a slurry. Slowly pour into the soup while stirring to thicken.
Reduce heat to low. Slowly drizzle the beaten egg into the soup while stirring gently. The egg should cook into thin strands.
Stir in sesame oil and white pepper. Add chopped green onions.
If desired, add sliced red chili for extra spice. Simmer for 5 minutes, then serve hot.
Notes
Serve immediately and garnish with extra green onions if desired. For a richer flavor, use homemade chicken broth.
