Preparation Steps
Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
Add onion and celery to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
Pour in chicken broth and add thyme and rosemary. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add gnocchi and cook until they float to the surface, about 3-5 minutes.
Stir in heavy cream and Parmesan cheese. Add the cooked chicken back to the pot and heat through.
Stir in spinach and cook until wilted, about 1 minute. Season with salt and pepper to taste.
