  • 1.5 lb Boneless, skinless chicken breasts Cut into bite-sized pieces
  • 1 tbsp Olive oil
  • 1 medium Onion Diced
  • 2 stalks Celery Diced
  • 2 cloves Garlic Minced
  • 8 cup Chicken broth
  • 1 tsp Dried thyme
  • 0.5 tsp Dried rosemary
  • 1 lb Potato gnocchi
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Fresh spinach Chopped
  • 1 to taste Salt and pepper

Preparation Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until browned on all sides. Remove chicken from the pot and set aside.
  • Add onion and celery to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  • Pour in chicken broth and add thyme and rosemary. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add gnocchi and cook until they float to the surface, about 3-5 minutes.
  • Stir in heavy cream and Parmesan cheese. Add the cooked chicken back to the pot and heat through.
  • Stir in spinach and cook until wilted, about 1 minute. Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

Optional: Garnish with extra Parmesan cheese and fresh parsley.
