Preparation Steps
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
In a separate bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 1 hour.
Preheat oven to 375°F (190°C).
On a lightly floured surface, roll out the dough to 0.25 inch thickness. Cut out shapes with cookie cutters.
Place cookies on ungreased baking sheets and bake for 8-10 minutes, or until edges are lightly golden.
Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
