  • 1 lb Ground beef Lean ground beef recommended
  • 1 medium Yellow onion Diced
  • 2 medium Carrots Diced
  • 2 stalks Celery Diced
  • 4 cloves Garlic Minced
  • 6 cups Beef broth
  • 1 can Diced tomatoes (14.5 oz), undrained
  • 1 cup Frozen mixed vegetables Peas, corn, carrots, and green beans
  • 1 tsp Dried oregano
  • 0.5 tsp Dried basil
  • 1 tsp Salt Or to taste
  • 0.5 tsp Black pepper Or to taste

Preparation Steps

  • In a large pot or Dutch oven, brown the ground beef over medium-high heat. Drain off any excess grease.
  • Add the diced onion, carrots, and celery to the pot. Cook until softened, about 5 minutes.
  • Stir in the minced garlic, dried oregano, and dried basil. Cook for 1 minute more.
  • Pour in the beef broth and add the diced tomatoes (undrained). Bring to a boil, then reduce heat and simmer for 15 minutes.
  • Stir in the frozen mixed vegetables. Continue to simmer for another 10 minutes, or until the vegetables are tender.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!

Notes

This soup can be stored in the refrigerator for up to 3 days. For a richer flavor, use bone broth instead of beef broth. Add a bay leaf while simmering for extra depth of flavor (remove before serving).
