  • 1 lb Dried Pinto Beans rinsed
  • 6 cups Water
  • 1 tbsp Olive Oil
  • 1 medium Onion diced
  • 2 cloves Garlic minced
  • 2 tbsp Chipotle Peppers in Adobo Sauce minced
  • 1 tsp Cumin
  • 0.5 tsp Smoked Paprika
  • 1 tsp Salt
  • 0.5 tsp Black Pepper

Preparation Steps

  • Rinse the pinto beans thoroughly under cold water.
  • In a large pot, combine the rinsed beans and water. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
  • While the beans are simmering, heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
  • Add the minced garlic and chipotle peppers to the skillet and cook for another minute until fragrant.
  • Stir in the cumin and smoked paprika, cooking for 30 seconds.
  • Once the beans are tender, drain most of the water, leaving about 1 cup of liquid in the pot.
  • Pour the skillet mixture into the pot with the beans. Stir in salt and pepper. Simmer for another 15 minutes, allowing the flavors to meld.

Notes

Serve hot as a side dish or main course. Garnish with your favorite toppings such as chopped cilantro, diced onions, or a dollop of sour cream.
