Preparation Steps
Rinse the pinto beans thoroughly under cold water.
In a large pot, combine the rinsed beans and water. Bring to a boil, then reduce heat and simmer for about 1 hour, or until the beans are tender.
While the beans are simmering, heat the olive oil in a skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes.
Add the minced garlic and chipotle peppers to the skillet and cook for another minute until fragrant.
Stir in the cumin and smoked paprika, cooking for 30 seconds.
Once the beans are tender, drain most of the water, leaving about 1 cup of liquid in the pot.
Pour the skillet mixture into the pot with the beans. Stir in salt and pepper. Simmer for another 15 minutes, allowing the flavors to meld.
Notes
Serve hot as a side dish or main course. Garnish with your favorite toppings such as chopped cilantro, diced onions, or a dollop of sour cream.
