Preparation Steps
Preheat oven to 350°F (175°C).
Cook chicken breasts according to your preferred method (boiling, baking, or grilling). Shred or dice the chicken and mix with taco seasoning.
In a large bowl, combine the diced tomatoes and green chilies, softened cream cheese, and sour cream. Mix well.
Spread a thin layer of the cream cheese mixture in the bottom of a 9x13 inch baking dish.
Layer tortillas, shredded chicken, and the cream cheese mixture, repeating until all ingredients are used. Top with shredded cheddar cheese.
Bake for 30-35 minutes, or until the cheese is melted and bubbly.
