  • 1 cup 200g granulated sugar

  • 1 cup 240g mashed ripe bananas (about 2-3 bananas)
  • 1/4 cup 60ml sour cream or Greek yogurt
  • 1 1/2 cups 190g all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup 60g chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven:

  • Preheat to 350°F (175°C).
  • Grease a 9x5-inch loaf pan and line with parchment paper.

Cream the Butter and Sugar:

  • In a large bowl, beat butter and sugar until light and fluffy.

Add Eggs, Bananas, and Sour Cream:

  • Mix in the eggs, one at a time, followed by vanilla, mashed bananas, and sour cream.

Mix the Dry Ingredients:

  • In another bowl, whisk together flour, baking soda, salt, and cinnamon.

Combine Wet and Dry Ingredients:

  • Gradually add the dry ingredients to the wet mixture.
  • Fold in walnuts or pecans if using.

Bake:

  • Pour batter into the prepared pan and smooth the top.
