Make instant pot sausage chili mac with ground sausage, tomatoes, kidney beans, and elbow pasta. This six-serving dinner pressure-cooks in four minutes.

  • 1 pound ground sausage
  • 1/2 onion diced
  • 2 tablespoons olive oil
  • 15 ounces diced tomatoes undrained
  • 8 ounces spaghetti sauce or plain tomato sauce
  • 15 ounces kidney beans drained
  • 1 cup elbow macaroni dry
  • 1 cup beef broth
  • 1 packet chili seasoning

  • Set the pressure cooker to sauté, add the olive oil, diced onion, and ground sausage, and cook until the sausage is no longer pink; turn the cooker off and scrape the bottom clean.
  • Pour in the diced tomatoes, spaghetti sauce, kidney beans, beef broth, and chili seasoning, then stir to combine.
  • Sprinkle the elbow macaroni over the mixture and gently press it beneath the liquid without stirring.
  • Close and seal the lid, cook at high pressure for 4 minutes, perform a quick release, and stir before serving.

Notes

Scraping the insert after sautéing helps prevent a burn warning during pressure cooking.
