Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion diced
- 2 cloves garlic minced
- 3 medium carrots sliced
- 3 stalks celery sliced
- 1 small head green cabbage chopped
- 1 can (14.5 ounces) diced tomatoes with juices
- 6 cups low-sodium vegetable broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1 teaspoon kosher salt or to taste
- 1/4 teaspoon black pepper
- 2 tablespoons fresh parsley chopped, for serving
Instructions
Set the Instant Pot to Sauté. Add olive oil, onion, carrots, and celery; cook for 4 minutes until the onion begins to soften. Add garlic and cook for 30 seconds.
Add cabbage, diced tomatoes, broth, Italian seasoning, smoked paprika, salt, and pepper. Stir, scraping any browned bits from the bottom.
Secure the lid and set the valve to sealing. Cook on High Pressure for 5 minutes, then allow a 10-minute natural release before carefully venting remaining pressure.
Open the lid away from your face and stir. Taste and adjust salt and pepper. Ladle into bowls and finish with parsley.
