  • 0.5 lb Irish bacon
  • 1 large onion chopped
  • 2 cups chopped cabbage
  • 2 cups diced potatoes
  • 6 cups chicken broth
  • 1 tsp dried thyme

  • 0.25 tsp black pepper

Preparation Steps

  • Cook bacon until crisp. Remove bacon and set aside, reserving bacon grease.
  • Sauté onion in bacon grease until softened. Add cabbage and potatoes and cook for 5 minutes.
  • Stir in chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, or until potatoes are tender.
  • Stir in cooked bacon. Serve hot.

Notes

This soup can be made ahead of time and reheated. Leftovers can be stored in the refrigerator for up to 3 days.
