Irish Stew Recipe

  • 1.5 lb Lamb, cut into 1-inch cubes
  • 1 large Onion, chopped
  • 2 medium Carrots, peeled and chopped
  • 2 medium Potatoes, peeled and cubed
  • 1 cup Lamb broth
  • 0.5 cup Water
  • 2 tbsp All-purpose flour
  • 1 tsp Dried thyme
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Preparation Steps

  • Season the lamb cubes with salt and pepper.
  • In a large pot or Dutch oven, brown the lamb cubes over medium-high heat.
  • Add the onion, carrots, and potatoes to the pot. Stir to combine.
  • Sprinkle the flour over the vegetables and stir well.
  • Pour in the lamb broth and water. Add the thyme.
  • Bring to a boil, then reduce heat to low, cover, and simmer for 1.5-2 hours, or until the lamb is tender.
