Instructions
Preparation Steps
Preheat the oven to 325 degrees Fahrenheit.
Season the pork with salt and black pepper. Heat olive oil in a large ovenproof pot over medium-high heat. Brown the pork on all sides.
Add the garlic and rosemary, cook for 1 minute. Pour in the red wine and bring to a simmer.
Cover the pot and transfer to the preheated oven. Roast for 4 hours, basting occasionally.
Remove from the oven and let rest for 10 minutes before slicing.
Notes
Serve with mashed potatoes or polenta for a complete meal.
