  • 4.5 pounds pork shoulder roast boneless
  • 2 cups red wine a good quality Italian wine
  • 2 tablespoons olive oil
  • 2 teaspoons salt or to taste
  • 1 teaspoon black pepper freshly ground
  • 6 cloves garlic peeled and smashed
  • 1 tablespoon rosemary fresh, chopped

Preparation Steps

  • Preheat the oven to 325 degrees Fahrenheit.
  • Season the pork with salt and black pepper. Heat olive oil in a large ovenproof pot over medium-high heat. Brown the pork on all sides.
  • Add the garlic and rosemary, cook for 1 minute. Pour in the red wine and bring to a simmer.
  • Cover the pot and transfer to the preheated oven. Roast for 4 hours, basting occasionally.
  • Remove from the oven and let rest for 10 minutes before slicing.

Notes

Serve with mashed potatoes or polenta for a complete meal.
