Italian Turkey Vegetable Noodle Soup

  • 1 pound Ground turkey
  • 8 cups Chicken broth low sodium
  • 1 cup Diced carrots
  • 1 cup Diced celery
  • 1 cup Diced onion
  • 1 cup Ditalini pasta
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried Italian seasoning
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Preparation Steps

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned.
  • Add diced carrots, celery, and onion to the pot and cook until softened, about 5 minutes.
  • Pour in chicken broth and bring to a boil. Stir in Italian seasoning, salt, and pepper.
  • Reduce heat and simmer for 15 minutes, or until vegetables are tender.
  • Add ditalini pasta to the pot and cook according to package directions, about 8-10 minutes, or until pasta is cooked through.
  • Serve hot and enjoy!

Notes

For a vegetarian option, substitute the ground turkey with white beans.
