Instructions
Preparation Steps
In a large pot or Dutch oven, heat olive oil over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned.
Add diced carrots, celery, and onion to the pot and cook until softened, about 5 minutes.
Pour in chicken broth and bring to a boil. Stir in Italian seasoning, salt, and pepper.
Reduce heat and simmer for 15 minutes, or until vegetables are tender.
Add ditalini pasta to the pot and cook according to package directions, about 8-10 minutes, or until pasta is cooked through.
Serve hot and enjoy!
Notes
For a vegetarian option, substitute the ground turkey with white beans.
