  • 2 cups cannellini beans canned, drained and rinsed
  • 1 bunch kale chopped
  • 4 cups chicken broth low sodium
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon salt or to taste
  • 0.25 teaspoon black pepper or to taste

Preparation Steps

  • In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute until fragrant.
  • Stir in the Italian seasoning, salt, and pepper. Add the cannellini beans and chicken broth, then bring to a simmer.
  • Add the chopped kale to the pot and continue to cook until the kale is wilted and the soup has thickened slightly, about 10-15 minutes.
  • Adjust seasoning to taste and serve hot.

Notes

For a vegetarian version, use vegetable broth instead of chicken broth.
