  • 2 pounds red potatoes peeled and diced
  • 0.5 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon jalapeno pepper finely chopped
  • 0.25 cup cilantro chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Instructions
 

Preparation Steps

  • Boil the potatoes in a large pot of salted water until tender, about 15 minutes.
  • In a large bowl, mix mayonnaise, sour cream, jalapeno, cilantro, salt, and pepper.
  • Drain potatoes and let cool slightly. Add them to the bowl and toss well.
  • Refrigerate for at least one hour before serving.

Notes

Adjust the amount of jalapeno for more or less heat.
