Jims Pineapple Cheese Pie

A delightful and easy-to-make pineapple cheese pie with a buttery crust and a creamy, tangy filling. Perfect for any occasion!

Ingredients
  

Crust

  • 2.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, cold and cubed

Filling

  • 2 packages cream cheese, softened 8 oz each
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 can crushed pineapple, drained 20 oz can
  • 0.5 teaspoon vanilla extract

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine flour, sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Press the crust mixture evenly into the bottom and up the sides of a 9-inch pie plate.
  • Bake the crust for 10-12 minutes, or until lightly golden. Remove from oven and let cool slightly.
  • In a separate bowl, beat the softened cream cheese and sugar until smooth.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • Gently fold in the drained crushed pineapple.
  • Pour the filling into the pre-baked crust.
  • Bake for 30-35 minutes, or until the center is just set. The pie should be slightly jiggly in the center.
  • Let the pie cool completely on a wire rack before chilling in the refrigerator for at least 2 hours before serving.

Notes

For an extra touch, you can top the pie with whipped cream and a cherry before serving.
