  • 1 pound kielbasa sausage sliced into 0.5 inch rounds
  • 1 pound baby potatoes quartered
  • 1 medium red onion cut into wedges
  • 1 medium bell pepper any color, cut into chunks
  • 2 tablespoon olive oil
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon salt

Preparation Steps

  • Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the sliced kielbasa, quartered potatoes, red onion wedges, and bell pepper chunks.
  • Drizzle the olive oil over the ingredients. Sprinkle with garlic powder, paprika, black pepper, and salt. Toss to coat everything evenly.
  • Spread the mixture in a single layer on the prepared baking sheet.
  • Roast for 25-30 minutes, or until the potatoes are tender and browned, and the kielbasa is heated through and slightly crispy. Stir halfway through cooking for even browning.
  • Serve hot and enjoy!

Notes

You can customize the vegetables based on your preference. Broccoli florets, zucchini, or Brussels sprouts would also be delicious additions. A sprinkle of fresh parsley before serving adds a nice touch of color and freshness.
