Heat 1 tablespoon of vegetable oil in a large skillet over medium heat. Add beaten eggs and scramble until cooked. Remove eggs from the skillet and set aside.
In the same skillet, add remaining vegetable oil. Cook kielbasa and shrimp until the shrimp is pink and the sausage is browned.
Add peas and carrots to the skillet and cook for 2-3 minutes.
Stir in the cooked rice, scrambled eggs, and soy sauce. Cook for an additional 2-3 minutes, stirring constantly.
Garnish with chopped green onions before serving.
Notes
For a spicier kick, add a dash of hot sauce or red pepper flakes.
