Lasagna Soup Recipe

A hearty and comforting lasagna soup, perfect for a chilly evening. This recipe combines the flavors of classic lasagna in a simple, easy-to-make soup.

  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 28 oz Crushed tomatoes
  • 15 oz Tomato sauce
  • 9 oz Lasagna noodles, broken
  • 1 cup Water
  • 1 tsp Dried oregano
  • 0.5 tsp Dried basil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Shredded mozzarella cheese

Preparation Steps

  • Brown the ground beef in a large pot or Dutch oven over medium-high heat. Drain off any excess fat.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the crushed tomatoes, tomato sauce, lasagna noodles, water, oregano, basil, salt, and pepper.
  • Bring the soup to a boil, then reduce heat and simmer for 20-25 minutes, or until the noodles are tender.
  • Stir in the mozzarella cheese and serve.

Notes

For a richer flavor, use Italian sausage instead of ground beef. You can also add other vegetables, such as carrots, celery, or mushrooms.
