Lasagna Soup Recipe

A hearty and flavorful lasagna soup, perfect for a cozy night in. This recipe combines the best of lasagna and soup, with layers of pasta, meat, and vegetables in a rich tomato broth.

  • 1 lb Ground beef
  • 1 cup Chopped onion
  • 2 cloves Garlic, minced
  • 28 oz Crushed tomatoes
  • 15 oz Lasagna noodles, broken
  • 1 cup Vegetable broth
  • 1 tsp Dried oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 cup Shredded mozzarella cheese

Preparation Steps

  • Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  • Stir in the crushed tomatoes, lasagna noodles, vegetable broth, oregano, salt, and pepper.
  • Bring the mixture to a boil, then reduce heat and simmer for 20-25 minutes, or until the noodles are tender.
  • Stir in the mozzarella cheese and serve hot.

Notes

For a vegetarian version, substitute the ground beef with 1 cup of lentils or mushrooms.
