Lembas Bread Recipe

- 2 cups 250g all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 cup 50g brown sugar
- 1/3 cup 80ml butter, softened
- 1 teaspoon vanilla extract
- 1/2 cup 120ml honey or maple syrup
- 1/3 cup 80ml milk
- 1/2 teaspoon orange zest optional, for extra flavor
Mix the Dry Ingredients:
In a large bowl, whisk together flour, salt, baking powder, cinnamon, and brown sugar.
Prepare the Dough:
Add butter, vanilla, honey (or maple syrup), and milk.
Mix until a soft dough forms (add a little extra flour if it’s too sticky).
Roll and Shape the Bread:
Roll out the dough to 1/2-inch thickness.
Cut into 3-inch squares using a sharp knife.
Lightly press a cross-hatch pattern into each square (traditional lembas design).
Bake the Lembas Bread:
Arrange the squares on the parchment-lined baking sheet.
Bake for 20-25 minutes, or until lightly golden brown.
- For a softer texture: Reduce baking time to 18 minutes.
- For a crunchier texture: Bake for 30 minutes or until golden brown.
- For extra flavor: Add a pinch of nutmeg or substitute vanilla for almond extract.
- Storage: Keep in an airtight container for up to 1 week or freeze for 3 months.
