  • 2.5 cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 0.5 cup Unsalted Butter Softened
  • 2 Large Eggs
  • 0.5 cup Milk
  • 2 teaspoons Lemon Zest
  • 2 tablespoons Lemon Juice Freshly squeezed
  • 1.5 teaspoons Baking Powder
  • 0.25 teaspoon Salt

Lemon Glaze

  • 1 cup Powdered Sugar
  • 3 tablespoons Lemon Juice Freshly squeezed

Preparation Steps

  • Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the lemon zest and lemon juice.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  • Fill the cupcake liners about 2/3 full.
  • Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  • While the cupcakes are cooling, prepare the lemon glaze. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.
  • Once the cupcakes are completely cool, drizzle the lemon glaze over the top.

Notes

For a richer lemon flavor, you can add 0.5 teaspoon of lemon extract to the batter. Garnish with lemon zest for an extra touch of elegance.
