Lemon Chicken with Lemon Butter Sauce

Ingredients
- 4 boneless, skinless chicken breasts halved horizontally and pounded evenly
- 1 teaspoon fine sea salt divided
- 1/2 teaspoon black pepper divided
- 1/2 cup all-purpose flour for dredging
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter divided
- 1 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest finely grated
- 2 tablespoons fresh parsley chopped
Instructions
Season the chicken with half the salt and pepper, then dredge lightly in flour and shake off excess.
Heat olive oil and half the butter in a large skillet over medium-high heat. Sear chicken until golden and cooked through, about 4 to 5 minutes per side. Transfer to a plate.
Add broth, lemon juice, and zest to the skillet, scraping up browned bits. Simmer until slightly reduced, about 3 minutes.
Whisk in remaining butter until the sauce is glossy. Return chicken to the skillet and spoon sauce over it.
Finish with parsley and serve immediately with the lemon butter sauce.
