  • 1 box yellow cake mix
  • 1 can evaporated milk 12 ounce can
  • 1 package cream cheese 8 ounce package, softened
  • 4 large eggs
  • 0.5 cup butter melted
  • 1 tablespoon lemon zest fresh
  • 0.5 cup lemon juice fresh

Preparation Steps

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, combine the cake mix, evaporated milk, softened cream cheese, eggs, melted butter, lemon zest, and lemon juice. Beat until smooth.
  • Pour the batter into the prepared baking pan.
  • Bake for 40-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before slicing and serving.

Notes

This cake is delicious served on its own or with a dusting of powdered sugar. For an extra lemon kick, you can top with a lemon glaze.
