Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a mixing bowl, cream together butter and 1 cup of granulated sugar until light and fluffy.
Beat in eggs, one at a time, then stir in the vanilla extract and lemon zest.
Combine flour, baking powder, and salt; gradually stir into the creamed mixture.
Shape dough into 1-inch balls and roll in powdered sugar to coat.
Place 2 inches apart on prepared baking sheets.
Bake for 10-12 minutes in the preheated oven until edges are lightly browned.
Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
For extra tangy flavor, add a tsp of lemon juice to the dough.
