  • 1.5 cups granulated sugar divided
  • 0.5 cups butter softened
  • 1 tbsp lemon zest freshly grated
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 2 eggs large
  • 1 tsp vanilla extract pure
  • 0.5 cups powdered sugar for rolling

Preparation Steps

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • In a mixing bowl, cream together butter and 1 cup of granulated sugar until light and fluffy.
  • Beat in eggs, one at a time, then stir in the vanilla extract and lemon zest.
  • Combine flour, baking powder, and salt; gradually stir into the creamed mixture.
  • Shape dough into 1-inch balls and roll in powdered sugar to coat.
  • Place 2 inches apart on prepared baking sheets.
  • Bake for 10-12 minutes in the preheated oven until edges are lightly browned.
  • Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For extra tangy flavor, add a tsp of lemon juice to the dough.
