Lemon Éclair Cake

A delightful lemon cake with a delicate éclair-like crust and a tangy lemon filling.

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 cup butter, softened
  • 4 large eggs
  • 1 cup lemon juice
  • 1 cup lemon zest

Preparation Steps

  • Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in lemon juice and zest.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Pour batter into the prepared pan and bake for 45-50 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let cool completely before frosting.

Notes

This cake is best served chilled. You can add a lemon glaze or buttercream frosting for extra flavor.
