Lemon Poppy Seed Bread

  • 2.5 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon poppy seeds
  • 0.5 cup unsalted butter melted
  • 2 large eggs
  • 1 cup buttermilk
  • 1 tablespoon lemon zest from about 2 lemons
  • 2 tablespoons fresh lemon juice

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
  • In a large bowl, whisk together the flour, sugar, baking soda, salt, and poppy seeds.
  • In a separate medium bowl, whisk together the melted butter, eggs, buttermilk, lemon zest, and lemon juice.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

This bread is delicious served plain or with a light glaze of powdered sugar and lemon juice.
