  • 2 lbs Potatoes Yukon Gold or red potatoes work best
  • 0.5 cup Mayonnaise
  • 0.25 cup Lemon Juice Freshly squeezed
  • 2 tablespoons Olive Oil Extra virgin
  • 1 tablespoon Fresh Dill Chopped
  • 1 tablespoon Fresh Parsley Chopped
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper

Preparation Steps

  • Place the potatoes in a large pot and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  • While the potatoes are cooling, whisk together the mayonnaise, lemon juice, olive oil, dill, parsley, salt, and pepper in a large bowl.
  • Cut the cooled potatoes into bite-sized pieces and add them to the bowl with the dressing. Toss to coat.
  • Cover and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled.

Notes

For a tangier salad, add a teaspoon of Dijon mustard to the dressing. You can also add chopped celery or red onion for extra crunch.
