Instructions
Preparation Steps
Heat olive oil in a large skillet over medium heat.
Add potatoes and cook until tender and slightly browned, about 15 minutes, stirring occasionally.
Add sausage, onion, and bell peppers to the skillet. Cook until sausage is browned and vegetables are tender, about 8-10 minutes.
Season with salt and pepper to taste.
In a separate skillet, fry eggs to your desired doneness.
Divide the hash among plates and top each serving with a fried egg.
Serve immediately.

Feel free to add other vegetables like mushrooms or zucchini to the hash.
