  • 1.5 lb Potatoes, cubed
  • 1 lb Breakfast sausage removed from casings
  • 1 medium Onion, chopped
  • 1 medium Green bell pepper, chopped
  • 1 medium Red bell pepper, chopped
  • 2 tablespoons Olive oil
  • 4 large Eggs
  • 0.5 teaspoon Salt or to taste
  • 0.5 teaspoon Black pepper or to taste

Preparation Steps

  • Heat olive oil in a large skillet over medium heat.
  • Add potatoes and cook until tender and slightly browned, about 15 minutes, stirring occasionally.
  • Add sausage, onion, and bell peppers to the skillet. Cook until sausage is browned and vegetables are tender, about 8-10 minutes.
  • Season with salt and pepper to taste.
  • In a separate skillet, fry eggs to your desired doneness.
  • Divide the hash among plates and top each serving with a fried egg.
  • Serve immediately.

Notes

Feel free to add other vegetables like mushrooms or zucchini to the hash.
