Preparation Steps
Melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute.
Gradually whisk in heavy cream and sherry. Bring to a simmer, stirring constantly. Reduce heat to low and simmer for 5 minutes, or until thickened.
Stir in Dijon mustard, salt, and pepper. Add lobster meat and cheese. Stir until cheese is melted and sauce is smooth.
Transfer to a greased baking dish and bake at 375°F for 15-20 minutes, or until bubbly and golden brown.
Notes
Serve immediately. Garnish with fresh parsley, if desired.
