Ingredients

For the Chicken:

  • 2 large boneless skinless chicken breasts (cut in half to make 4 thinner pieces)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon Italian seasoning
  • 1 tablespoon Worcestershire sauce
  • ½ tablespoon lemon juice

For the Parmesan Crust:

  • ½ cup 50g grated Parmesan cheese
  • ¼ cup 30g shredded provolone or mozzarella cheese
  • 2 tablespoons butter melted
  • 2 tablespoons mayonnaise
  • ½ teaspoon garlic powder

For the Crispy Topping:

  • ½ cup 60g panko breadcrumbs
  • 1 tablespoon melted butter
  • 1 tablespoon grated Parmesan cheese

Instructions

Prepare the Chicken:

  • Preheat oven to 400°F (200°C).
  • In a small bowl, mix olive oil, salt, black pepper, garlic powder, onion powder, smoked paprika, Italian seasoning, Worcestershire sauce, and lemon juice.
  • Rub the mixture over the chicken breasts.

Cook the Chicken:

  • Heat a skillet over medium-high heat and sear the chicken for 3-4 minutes per side until golden brown.
  • Transfer to a baking sheet and bake for 12-15 minutes, or until the internal temperature reaches 165°F (74°C).

Prepare the Parmesan Crust:

  • In a bowl, mix Parmesan cheese, provolone cheese, melted butter, mayonnaise, and garlic powder.

Make the Crispy Topping:

  • In another bowl, mix panko breadcrumbs with melted butter and Parmesan cheese.

Assemble & Broil:

  • Remove the chicken from the oven and spread the Parmesan mixture evenly over each piece.
  • Sprinkle the crispy topping over the cheese layer.
  • Broil on high for 2-3 minutes, or until the top is golden and crispy.

Serve & Enjoy:

  • Garnish with fresh parsley and serve hot!

Notes

  • Use chicken thighs instead of breasts for a juicier texture.
  • Swap provolone with cheddar or Swiss cheese for a different flavor.
  • Broiling for the last 2-3 minutes gives a crispy, golden topping.
  • Store leftovers in an airtight container for up to 3 days.
