Low Carb Breakfast Casserole with Sausage

Ingredients
- 1 tablespoon olive oil
- 8 ounces breakfast sausage casings removed
- 1 red bell pepper diced
- 2 cups baby spinach roughly chopped
- 10 large eggs
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese divided
Instructions
Heat the oven to 375°F and lightly coat a 9-inch square baking dish with the olive oil.
Cook the sausage in a skillet over medium heat for 6 to 8 minutes, breaking it into small crumbles.
Add the bell pepper and cook for 3 minutes, then stir in the spinach until wilted.
Whisk the eggs, heavy cream, salt, pepper, and half the cheddar in a large bowl.
Spread the sausage mixture in the baking dish, pour the egg mixture over it, and top with the remaining cheddar.
Bake for 25 to 28 minutes, until the center is set and the top is lightly golden; rest for 5 minutes before cutting into 8 pieces.
