  • 2 ripe mangoes mango peeled and diced
  • 1 large cucumber cucumber peeled, seeded, and diced
  • 0.5 red onion red onion thinly sliced
  • 0.25 cup fresh cilantro chopped
  • 0.25 cup fresh mint chopped

Dressing

  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 0.5 teaspoon honey or to taste
  • 0.25 teaspoon salt
  • 0.125 teaspoon black pepper

Preparation Steps

  • In a large bowl, combine the diced mango, diced cucumber, sliced red onion, chopped cilantro, and chopped mint.
  • In a small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper until well combined.
  • Pour the dressing over the salad ingredients and toss gently to coat.
  • Taste and adjust seasoning if necessary. Serve immediately or chill for later.

Notes

This salad is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
