Meatball Hash Brown Bake with Cheesy Potatoes

Ingredients
- 2 large eggs lightly beaten
- 3/4 cup crushed saltine crackers
- 6 garlic cloves minced
- 2 teaspoons kosher salt divided
- 1 1/2 teaspoons black pepper divided
- 1 pound ground beef
- 10.75 ounces condensed cream of chicken soup undiluted
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 large yellow onion chopped
- 30 ounces frozen shredded hash brown potatoes divided
Instructions
Mix eggs, cracker crumbs, garlic, 1 teaspoon salt, and 1/2 teaspoon pepper.
Mix in beef, shape into 1-inch meatballs, cook covered in a skillet with a little water until browned, then drain.
Combine soup, sour cream, cheddar, onion, and remaining seasoning. Pat hash browns dry and stir them in. Transfer to a greased 13-by-9-inch dish, arrange meatballs on top, cover, and bake at 350°F for 45 minutes. Uncover and bake 15 minutes more until cooked through and potatoes are tender.
