  • 4 pound salmon fillets
  • 0.5 cup cherry tomatoes halved
  • 0.5 cup Kalamata olives pitted and halved
  • 0.25 cup red onion thinly sliced
  • 0.5 cup cucumber diced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
  • 2 tablespoon olive oil
  • 0.5 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Preparation Steps

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Place the salmon fillets on the prepared baking sheet.

  • In a small bowl, combine the cherry tomatoes, Kalamata olives, red onion, and cucumber.

  • Drizzle the vegetable mixture with olive oil, then season with oregano, salt, and pepper. Toss to combine.
