  • 2.5 pounds beef chuck cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth low sodium
  • 1 can diced tomatoes 14.5 ounces
  • 2 cups carrots sliced
  • 2 cups potatoes peeled and cubed
  • 1 teaspoon cumin
  • 0.5 teaspoon chili powder

Preparation Steps

  • Heat the oil in a large pot over medium-high heat. Add the beef and brown on all sides.
  • Remove the beef and set aside. Add onions and garlic to the pot and sauté until softened.
  • Return the beef to the pot. Stir in the beef broth, diced tomatoes, cumin, and chili powder.
  • Bring to a simmer, cover, and cook for 60 minutes.
  • Add carrots and potatoes; continue to cook until vegetables are tender, about 30 minutes more.

Notes

Best served with warm tortillas or over rice.
