  • 1 cup Long Grain Rice rinsed
  • 6 cups Milk whole milk recommended
  • 0.5 cup Water
  • 1 cinnamon stick Mexican Cinnamon Stick
  • 0.75 cup Sugar
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Vanilla Extract

Preparation Steps

  • In a medium saucepan, combine the rice, water, and cinnamon stick. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the water is absorbed.
  • Add the milk, sugar, and salt to the saucepan. Bring to a simmer over medium heat, stirring occasionally to prevent sticking.
  • Reduce heat to low and simmer for 25-30 minutes, or until the rice is tender and the pudding has thickened to your desired consistency. Stir frequently during the last 10 minutes to prevent sticking.
  • Remove from heat and stir in the vanilla extract. Remove the cinnamon stick.
  • Serve warm or chilled. Garnish with ground cinnamon, if desired.

Notes

For a richer flavor, use evaporated milk or sweetened condensed milk in place of some of the whole milk.
