Mexican shredded chicken

A simple and flavorful shredded chicken recipe perfect for tacos, burritos, and more!

  • 1.5 pounds chicken breasts
  • 1 can diced tomatoes 14.5 ounce can, undrained
  • 1 packet taco seasoning
  • 0.5 cup chicken broth

Preparation Steps

  • Place chicken breasts in a slow cooker.
  • Pour undrained diced tomatoes over the chicken.
  • Sprinkle taco seasoning over the chicken.
  • Add chicken broth.
  • Cover and cook on low for 3-4 hours or on high for 1.5-2 hours, until chicken is cooked through and tender.
  • Remove chicken from the slow cooker and shred with two forks. Return shredded chicken to the slow cooker and stir to combine with the sauce.
