Instructions
Preparation Steps
Preheat the oven to 375°F (190°C).
Cut the tops off the bell peppers and remove seeds.
In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Add taco seasoning and diced tomatoes to the beef. Stir to combine.
Mix in cooked rice and fill the bell peppers with the mixture.
Place filled peppers in a baking dish and sprinkle cheese over the tops.
Bake for 25-30 minutes until peppers are tender and cheese is bubbly.
Notes
These stuffed peppers can be made ahead and reheated easily. Enjoy with sour cream or salsa on the side!
