  • 1 lb ground beef lean
  • 1 cup cooked rice white or brown
  • 4 large bell peppers any color
  • 1 cup shredded cheese Mexican blend
  • 1 tbsp taco seasoning store-bought or homemade
  • 1 can diced tomatoes with juices

Preparation Steps

  • Preheat the oven to 375°F (190°C).
  • Cut the tops off the bell peppers and remove seeds.
  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add taco seasoning and diced tomatoes to the beef. Stir to combine.
  • Mix in cooked rice and fill the bell peppers with the mixture.
  • Place filled peppers in a baking dish and sprinkle cheese over the tops.
  • Bake for 25-30 minutes until peppers are tender and cheese is bubbly.

Notes

These stuffed peppers can be made ahead and reheated easily. Enjoy with sour cream or salsa on the side!
