Minestrone Soup Recipe

A hearty and healthy Italian vegetable soup perfect for a comforting meal.

  • 1 tablespoon Olive Oil Extra Virgin
  • 1 cup Diced Onion
  • 2 cloves Garlic Minced
  • 4 cups Vegetable Broth Low Sodium
  • 1 can Diced Tomatoes (14.5 oz)
  • 1 cup Diced Carrots
  • 1 cup Diced Celery
  • 1 cup Zucchini Diced
  • 1 cup Green Beans Cut into 1-inch pieces
  • 0.5 cup Small Pasta Ditalini or Elbow Macaroni
  • 1 can Kidney Beans (15 oz), drained and rinsed
  • 0.5 cup Fresh Parsley Chopped
  • 1 teaspoon Dried Oregano
  • 0.5 teaspoon Salt To taste
  • 0.25 teaspoon Black Pepper To taste

Instructions
 

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  • Add vegetable broth, diced tomatoes, carrots, celery, zucchini, green beans, oregano, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Add pasta and kidney beans to the pot. Cook until pasta is tender, about 10 minutes.
  • Stir in fresh parsley. Serve hot.

Notes

Serve with a sprinkle of parmesan cheese if desired.
