Mini Fruit Pizzas

These Mini Fruit Pizzas are a delightful and colorful dessert, perfect for parties or a fun treat. A sweet cookie base topped with cream cheese frosting and fresh fruit.

Ingredients
  

Cookie Base

  • 0.5 cup unsalted butter, softened
  • 0.33 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1.5 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon salt

Cream Cheese Frosting

  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Toppings

  • 2 cups mixed fresh fruit, sliced or diced such as strawberries, blueberries, kiwi, mandarin oranges

Preparation Steps

  • Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  • In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.

  • Beat in the egg and vanilla extract until well combined.

  • In a separate bowl, whisk together the flour, baking powder, and salt.

  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  • Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  • Using the bottom of a glass or a small measuring cup, gently flatten each dough ball into a circle about 3 inches in diameter.
  • Bake for 10-12 minutes, or until the edges are lightly golden brown.
  • Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  • While the cookies cool, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

  • Once the cookies are completely cool, spread a layer of cream cheese frosting over the top of each cookie.
  • Decorate each "pizza" with fresh fruit of your choice.

Notes

For best results, ensure all ingredients for the cookie base and frosting are at room temperature. You can make the cookie bases ahead of time and store them in an airtight container at room temperature for up to 3 days. Frost and top just before serving.
